Well, it doesn't look that bad the way it is. In this case I don't think the area should opened up for the patch piece. I think a new chip should be found/made to fit the existing chip as closely as reasonably possible. Finding a piece with very similar grain structure is the first challenge. The next challenge will be to make a chip that fits into the impression very closely and has the grain alignment right. I think I would drill some holes in the donor piece, and purposely chip out the wood until you get a very close match to the missing chip then epoxy it in with very light brown epoxy and carefully work it back to shape with as little disturbance to the finish as possible.

I do a little wood working and have fixed up some old stocks and pistol grips. That doesn't look too bad and I might be temped to try a little wood filler ... they have different shades, light to dark. Then a little light sanding and finishing. Then it depends on how much you want to do to it.

I re-did this old Win-67 I've had since I was a little kid ... it's from the '60s or maybe even the late '50s. And I did my dads old Win-63 that had a lot of squirrel hunting miles on it and needed some love. The grips on my Clark Bullseye Gun I made from some old scrapes of hardwood.
