Man, you folks are lucky to live in an area where 'knife shows' exist. Down here in south Texas, the only similar venues are gun shows which have a good assortment of knife vendors - sellers present. But nothing exclusive to cutlery.

Don't get too envious. Knife shows are actually scarce as hen's teeth up here. (DC Metro-VA-MD) From about the mid '80s to the early '00s, there were a bunch, but they've pretty much gone the way of the Dodo.
