I understand that rimfire challenge is a two gun competition and it has two divisions based on the sights used (open and limited). I assume that if you use iron sights with you pistol you must use iron sights with your rifle. Am I correct in assuming that I cannot use iron sights on one firearm and a red dot on the other?

Rimfire Challenge can be 1 gun or several. You can shoot handgun and long gun with different sights. At least the last I heard this was true.
Depends on the match whether 2 guns are required, some matches are just pistol, some just rifle, some either and some both. Yes, you can run irons on one gun, but if the other gun has an optic, you will be shooting in Open division.

I have also seen many local matches with varying adherence to the "official rules". I suggest you contact the match director with your question.
My guess is that at a local match you would be ok to shoot one gun irons and one with an optic, but would be placed in the open division.
