Another thread gave me an idea: why don't we post good BBQ joints around the country. If you're traveling somewhere, you'd have an "insider's" opinion on where the good BBQ is.

Here's a few of my favorites:

Sonny Bryan's in Dallas, Tx
Eddie Deen's in Dallas, Tx
Cyclone BBQ in Cyclone, Tx
Clem Mikeska's in Temple, Tx
New Braunfel's Smoke House in New Braunfels, Tx
Joe Cotton's in Robstown, Tx
Roscoe's BBQ in Rochester, MN (great ribs)

i've never experienced a rib to even come close to Cozy Corner's in memphis....and, their cornish game hens make the perfect compliment!!!...

for shoulder, i'm partial to what my bbq team and i do.... nealy's or interstate bbq in memphis will do ya right there....... tops makes a very respectable and predictable shoulder, and has bulk packs available for parties!

but, let's get real folks.......bbq is a style of cookin, not a flavor of ketchup!!!!!!! good bbq shouldn't NEED sauce!!!!!!!..... if it doesn't have all the flavors you want, why would addin ketchup help?????

B's - Greenville, NC
Skylight Inn - Ayden, NC
Bill's - Wilson, NC
Wilber's - Goldsboro, NC
Stamey's - Greensboro, NC
Short Sugar's - Reidsville, NC
Lexington Barbecue - Lexington, NC
Speedy's - Lexington, NC
Bridges - Shelby, NC

The above locations are the Holy Mecca's of pork barbecue. The problem we have here in North Carolina is so many good places to eat it, however, the ones listed above have stood the test of time - most were opened before WW II. Be advised, we have two styles, eastern and Lexington, and I love both. I've had the pleasure of eating good que throughout this country, except for that texas glop served out West, but the only people who have ever complained about the food served at these shrines are overworked heart surgeons.

Good eats to all!!!

DISCLAIMER: Everything writtern here is, of course, IMHO.

The difference in the two is the sauce. Eastern sauce is mainly vinegar with varying degrees of red and black pepper and small amounts of any additional seasonings. Lexington style is a thin dipping sauce made with water, vinegar, catsup and seasonings.

Also, Lexington style is served with barbeque slaw or what outsiders call red slaw. Delicious, light and tastes best when eaten with a fork of half que and half slaw. Man am I hungry.

IDriveB5 - Carolina BBQ is mighty fine stuff. Be careful, it's addictive.
