I would imagine one would have to be careful cleaning it but once the hide is off it will probably be good looking meat. I'm still surprised at the number of folks that won't cook and eat something they have never tried before. LOL. Every year the Wildlife Club at NC State University has a wild game dinner and serve up a lot of things many have never tried. In addition to the usual bass, bream, catfish, some seafood, venison, bear, rabbit, squirrel and the like. Then there is the beaver ragu and barbcue, bobcat, nutria, coon, etc. I'm sure if we had porcupines and armadillo it would be there as well. And it all is great. If it wasn't labeled you would be hard pressed to name it. Try something new....... you might like it.

I'm not an alumni but I'll surely support any group of students trying to make hunting and the outdoors better for everyone. They also have a silent auction and for years I have donated one of my wing bone calls. They are always great events and a great bunch of young folks.
