How tough are the steaks in Arizona that you need sharp knifes? Living in Omaha, I have a lot to learn about bad steaks.

We get some good steaks here, but not as good as Nebraska beef like at Gorats on Center St

My favorite steakhouse is Peter Luger's, but I also appreciate the steaks I make at home. With good quality beef you shouldn't need a more than a serrated steak knife, nor need to bring your own to a restaurant.

My favorite is Bob's Chophouse, followed by Fogo de Chao, but of the modestly priced chains, Texas Roadhouse is my fave based on the food. My one beef about TR is how loud it always is. All hard surfaces with nothing to absorb sound.

That said I make a pretty good steak at home. This one was last month. Salt, pepper, onion powder, garlic powder, chili powder and a little cayenne. Smoked at 225º to an internal temp of 118º, then seared to 125º IT. Let it rest under foil for a bit, then served.

Guess I should explain knife question. I went to a BBQ place once and the waitress forgot to give me a knife. Then ignored me so ever since I always carried my own..

Nope. I have no favorite restaurants. I'm lucky to have family that are great cooks and that has satisfied me. We do have some places we like for bigger get togethers. I always have a good knife in my pocket that works for me and any others who need it.

At least here in WA, according to ME, steakhouses are for those who a) can’t grill a good steak or b) those who don’t like to do dishes. I can do both, happily.

BTW, I HAVE been chastised severely by my better half for pulling out the SOG to cut an ill-prepared steak in public. Not embarrassing for me; should be for the ”chef”...

First time in Omaha was about 4 years ago.
I was really looking forward to a great steak, (or two).

Went o a place called Caniglia’s. Been there for at least 50 years.
I ordered a med rare ribeye.
The steak I was served had less fat than my fingernails, was about room temperature, and was on a plastic plate.

Wife and friend did not fare much better.

Gave up on the idea of a steak in Omaha.
