Yes. You can get Morton Tender Quick for the curing process. I hot smoke trout on my Weber and they come out delish.
I put the trout on the grill when the coals are dying from a previously cooked dinner. I add some dry wood pieces on top of the coals for smoke. Close the lid then go back to it several hours later. Works great. I usually do it in freezing weather so the fire can go out and the meat will chill on its own.
The pork would just take a bit more effort and attention.
