Just what I need, a knife that breaks when used as a knife.

I use one of these for my ceramic knife. They do come in coarser grits, but this one does just fine for every knife I own (mirror polish on steel if your hand is steady...)

Really, ceramic knives are only good for slicing vegies, and thats about it. They are too brittle for anything else.
I had one that was so bad off, they replaced it with a new one. And since a direct replacement was out of stock, I got several choices for upgrades. Free. Just the initial$10 for shipping IIRC.

Wait, I just posted again.... years later!

My wife could dull a ceramic knife in no time we also had a couple of those copper non stick fry pans as seen on tv. I finally threw the one out. Then I figured out what was going on. She was using the ceramic knives for cutting steaks etc in the non stick pans. I put the knife out in the shop. Saves on pans.
